Last Saturday I told Katy to pick any recipe out of any cookbook, and we would make it together. She went straight for my favorite baking book (she's no dummy), opened it to the cake section and found "Chocolate Truffle Cake." Sixteen ounces of chocolate, one cup of butter, sugar, nine eggs (yes, nine), a dash of cream of tartar... that's it. No flour, so I know it's gonna be good.

Katy's new baking skills: greasing & flouring a springform pan, melting chocolate, separating an egg, scraping a bowl with a rubber spatula. Is there any kitchen utensil better than a rubber spatula? I submit that there is not.
She also learned that unsweetened chocolate is not yummy.
In case you can't tell from the picture, it turned out delish, and was divine served warm, with vanilla bean ice cream.
